The production of olive oil is obtained with the variety of Aglandau and Cayon olive trees, which are particularly resilient to the cold temperatures of the back hills of Provence.
The olives are brought to the oil mill by small lots of 250kg to avoid oxidization. The oil is for sale at the Domain.
